Sauté diced red onion + sliced Serrano peppers in oil. Purée some leftover whole canned tomatoes with chipotles in adobo, garlic cloves, spices (notably cumin, hot smoked paprika, coriander, Hungarian sweet paprika, oregano, Northwoods fire seasoning, salt + pepper). Add this to the skillet and let bubble. Add roughly torn kale plus some oil, enough to blend into a slurry. Add this to the pan + mix with tomato sauce. Bubble on medium. Crack 4 eggs evenly over surface, cover + cook 4-5 mins (4 is on the runnier side). Carefully spoon tomato sauce on eggs and serve with a buttered everything bagel!
