Step 1:

1.5 C boiling water
6 tsp honey
6 tsp butter
2 tsp salt

Combine all the above ingredients in a large bowl and let cool.

Step 2:

1.5 C lukewarm water
3 tsp sugar
2 tbsp yeast

Dissolve the water and sugar in bowl. Sprinkle the yeast in top and let sit

Step 3:
2 eggs, beaten
6-7 C Unbleached white flour

Mix the eggs into step 1 mixture once it's cooked. Add 1 C flour to mixture to this mixture and stir well.

Add the yeast mixture (step 2) to the bowl and stir to incorporate. Gradually add the remaining flour, until dough gets tough to stir. Empty the dough and knead until smooth and elastic, about 10 min. Keep surface floured to prevent from sticking.

Place the dough into a greased bowl, cover with towel and let sit aside to rise.

Let the dough rise until it's doubled in size (40 min) and punch it down. Repeat this process once.

Preheat oven to 350 F and great two 9x13" baking sheet pans or round pans. Cut off pieces of dough, about 1/2 C in size and form little buns. Stretch and tuck dough under to make smooth on top.

Place the buns about 1/2" apart on greased pan, cover and let rise until doubled (30 min).

Bake for 15-20 min or until nicely browned.
