Brown rice from Saveur
1 cup brown rice
Salt to taste
Rinse the rice in a strainer for 30 seconds. Bring 12 cups of water to a boil in a large pot with a tight fitting lid. Add the rice, stir and boil uncovered for 30 minutes. Pour rice into a strainer over the sink.
Let the rice drain for 10 seconds, then return to the pot, off the heat. Cover with the lid and set aside to steam for 10 minutes. Uncover the rice, fluff with a fork and season with salt.
