Post-long bike ride, clean-out the fridge brunch. Sauté in olive oil diced russet potato, chopped onion, bell pepper, couple of sliced mushrooms. Added rough chopped beet greens and handful of kidney beans. Season with salt, pepper and a little balsamic. Top with over-easy egg and sliced avocado. I SO earned this!
