Preheat skillet on medium heat. Add butter and swirl in pan. When it begins to bubble (watch it closely!) add in diced apples. Add bread to oven on broil.
Sautee apples until soft and browned, about 4 minutes. Remove bread from the oven when as crisp as you like your typical toast.
Top toast with apples, sprinkle with walnuts and blue cheese. Add a drizzle of honey to taste and place back in oven until cheese is melted.
