Slice up some russet potatoes, bathe in super cold water with some added salt for 1 hour - drain and pat dry - set oven to 400 degrees - grease baking sheets - lay out potatoes and drizzle with Olive Oil + salt + fresh sprigs thyme and rub all together with your hands. Into the oven they go for 50 minutes - toss and turn and flip and switch rack levels every 10 minutes. Remove when crisped to your liking, add more salt and fresh chopped parsley. Done.
