power protein veg bowl! cook red lentils by sautéeing two cloves garlic in oil, then adding one cup lentils, two cups water. simmer covered until water is just absorbed and lentils are soft. season to taste with salt, pepper, cayenne. roast sweet potato wedges at 400 after tossing with oil, salt, pepper, and maple syrup. steam fresh kale with garlic and drizzle with lemon juice to finish. so filling, so delicious.
