This pesto pasta is inspired by one of my favorite sandwiches. First, make pesto from ramps, toasted sunflower kernels, Parmesan, olive oil, some salt, pepper, and lemon juice. Toss with long fusilli pasta and some baby arugula. Top with a ball of creamy Burrata and finish with a drizzle of olive oil, salt, pepper, Parmesan, and one more squeeze of lemon. Enjoy!
