Beach holiday post-swim quick dinner. Stir-fried chopped lobster with roughly cut cherry tomatoes and snow peas in a base of cooked finely diced red onions, garlic and chili finished with Maldon salt, freshly ground black pepper and a dash of cream. Sprinkled liberally with fresh coriander. Served with boiled Basmati rice. Great with a glass of chilled semillion Sauvignon blanc.
