Fill a large pot of water to boiling.
Wash and cut the artichokes with a sharp knife at the base of where the small leaves begin.
Slice off the tops (to let the water into the center).
Pour about 2 tablespoons of table vinegar ( actually any vinegar will do, tonight I only had red wine vinegar) into the pot.
Then place artichokes in- try to make them cook upside down. This doesn't work very well but it's worth the effort if you can do it.
Cook until the smaller leaves begin to fall off. I would guess about 50 minutes for 2 artichokes but it really just depends on the size and how much water is in the pot!
Drain and serve with your favorite dipping sauce. Ours is a garlic and vinegar and oil dressing.
