Forgetful chefs make pesto with whatever's available--combine a generous bowlful of wilted greens (parsley, basil, mustard greens), a few cloves of garlic, a handful of chopped nuts (anything but peanuts works) in a food processor; pulse until coarsely chopped, then add just enough olive oil to make smooth. As an easy side, mix chopped cherry tomatoes with red wine vinegar, salt, and red pepper flakes.
