Springtime Monday night cooking that would make my mom proud: lightly stir-fried Shanghai bok choy with some goodies (enoki mushrooms and wood ear) thrown in.

First stir fry the stems with garlic and a good shake of salt until they start to soften. Add in the enoki, and after they soften, add the wood ear and the green tops until they collapse slightly and lose their raw taste. Season along the way and hit it at the end with pepper and some sesame oil!
