Carrot and ginger cod en papillote. I was craving a smoothie, but it was dinner time, so I rubbed parchment paper with olive oil, topped with long slices of carrot, cracked salt and pepper, and plopped the fish on top. Then, it was a layer of more salt and pepper, a sprinkle of coriander, fresh orange slices, slivered almonds and parsley. Salt and pepper oooone more time, then drizzle olive oil and a splash of white wine. Wrap it up like an empanada pocket in the parchment and pop it in a 425 degree oven for 10-12 minutes. Steam your face in the bright aroma and call it a spa day. ?
