Easy & cheesy orzo with sweet potato || leftover cubed sweet potatoes got reincarnated into this easy weeknight meal! First I cooked about 1C of orzo in homemade chicken bone broth (from my freezer stash) to give it a good flavour base and nutrition. I used enough stock to ensure it was still quite wet once cooked, similar to a risotto consistency. Grabbed some partial blocks of white cheddar and mozzarella hanging out in the cheese drawer of the fridge, grated those and stirred it in with the orzo and sweet potato cubes. Sprinkled some spelt breadcrumbs over the top and laid a few sage leaves that I brushed with oil to pick up just a hint of their fragrance. Baked at 350f for 25 min. Active prep was only ~20 minutes! ??
