Ramps and Golden Beets!
Simply roast the golden beets for about 15 minutes in olive oil (seasoned with salt and pepper) until tender and browned. Remove pan from oven and remove golden beets from the pan.
Wipe out pan and then add 1-2 tablespoons of butter to pan over medium high and heat until frothy. Add white parts of ramps and cook until just starting to brown. Add roughly chopped green tops and season lightly with salt. Cook until just wilted. Gently stir in the golden beets. Remove from heat and serve. :-)
