Cook razor clams in water/wine/whatever until they open. Plunge into iced water as soon as they are done so they don't turn to rubber. Prepare how you like and return to the shell fitting two to each shell. Prepare toasted breadcrumbs with melted butter, crushed garlic & herbs then sprinkle over the clam meat in the shell. Get a good hot bbq (charcoal) going and with the lid on (to impart maximum smoke flavour) cook briefly until the first sizzle.
