Raw buckwheat granola with gojiberry-milk
Soak 1/2 cup buckwheat with 1 tsp apple cider vinegar with 1 cup water overnight. Also soak 2 tbsp rinsed gojiberries in a jar filled with 1 cup plant based milk in the fridge and 1 tbsp gojiberries with 3 tbsp water in a jar on the kitchen counter. In the morning rinse the buckwheat and add:
3 tbs water
1/2 tsp vanilla
1 pinch salt
1 tsp maca @organicburst
1 little knob minced ginger
1 small banana
Blend in an immersion blender until creamy but still a bit crumbly.
Blend the gojiberry milk until smooth.
Pour together in a bowl and garnish with:
1 tbsp cacao nibs
1 tbsp sliced almonds
and the soaked goji berries
