Vegan kale, sweet potato and quinoa soup.

Make a roux with almond milk and a little flour and coconut oil. Add vegetable broth of choice (I used better than bullion) to roux. Then add chopped sweet potato and let soften. Then add uncooked quinoa. Also add salt and pepper, a little crushed garlic and splash of soy sauce. Once cooked add kale at the end and simmer.
