Stock up.

Save all of your veggie scraps in a gallon bag in the freezer. When you have a bag or two worth, fill a stock pot with scraps and water. Toss in some whole spices. Boil. More time equals more flavor.

I love doing this! And love that flavors change with each season!

I'm trying to train myself to do this. I keep remembering right after tossing every thing into the trash.

I take my bag out of the freezer while I'm gathering my ingredients. It's part of the prep work Then when I'm chopping and need to clear the cutting board the scraps can go right in the bag. Maybe that sequence could work for you too.

I got a bag of scraps, too. One of the best things I ever started doing in the kitchen.

It's incredibly worthwhile. Both by lessening waste and creating a broth that is superior to what can be purchased.
