Had a craving for tortilla soup on a rainy Saturday: 1. soften onion, garlic and red pepper and char 1 jalapeño. Blend all together. 2. Add to pot and bring to boil, then add chicken broth to desired thickness (I like mine thick!!). Let simmer for 15-20 mins. 3. Add precooked chicken (I had leftover slowcooker pulled chicken, yum!) 4. Top with cilantro, lime, avocado, sour cream, cheese and tortilla chips!
