Brown lamb shanks on all sides. Remove from pan and sautée onions, garlic, and ginger. Add cumin, coriander, cinnamon, cloves, crushed tomatoes, and chicken broth, and toss the shanks back in. Bake in 350 degree oven for 2 hours. Add dried apricots, green olives, and cilantro and serve with roasted butternut squash, plain yogurt, and almonds.
