Celebrating National Grilled Cheese Day with one of my faves: Heat a small skillet over medium heat with about a tablespoon of butter. Grab two slices of 9-grain & seed bread (or other hearty bread of your choice) slather both slices with thick and seedy European-style fig spread. Then layer one slice with sliced Brie then add two slices of crisply cooked applewood-smoked bacon ( I like to break them in half to make 4 half slices, they just fit better on the bread) top with a second layer of Brie then the other slice of figgy bread. Give the whole thing a little press, to make sure all your components are going to stay where they should be, then slide your sandwich into the skillet and cook until your desired degree of crispiness is obtained. When you flip you sandwich, add more butter to the skillet if needed. Then enjoy! Oh, and bring extra napkins because this is a buttery, sticky, oozy delight!
