A springy salad inspired by a recent lunch from Eataly. Butterhead lettuce, peeled carrots, tomato, mozzarella & 2 six-minute eggs, mint, basil, and dill dressed with olive oil, lemon, Dijon mustard & diced shallot.

Don't skip the herbs (but use whatever you have on hand) it adds a lovely punch that makes the salad into something special!
