Secret ingredient chutney! This goes into almost everything I cook, I'd bake with it if I could?. Wash, chop jalapeños and add to food processor or blender. Chop peeled garlic and toss in as well- everything should be relatively the same size. Add some salt, oil and a bit of water. Blend/ process into not quite a purée, some texture is good. Jar, top with salt and cover with oil. Freeze jars, leaving one in fridge for constant use. I use this in all my Indian cooking, white sauces, any blended egg dish, really almost anything. It's not as spicy as you think once it cooks;).
