Cannot get onboard with the flavour of preserved lemons but still have that jar lurking at the bag of your fridge? Just rinse them well and boil them in plenty of water until soft and then use them to make Claudia Roden's Citrus Cake (using about 3 lemons for every 2 oranges the recipe asks for).

Not at all! Rinsing and boiling the lemons first removes the excess salt from the lemons!

That is incredible, I better run out right now to get some of the last decent citrus and preserve it just so I can keep having this cake. Thank you!
