Make quinoa using a good chicken or vegetable broth. Then take chopped broccolini and drizzle with olive oil and lemon juice, then sprinkle with roasted red pepper flakes and bake until slightly browned in 400 degree oven. Add halved cherry tomatoes and crumbled goat cheese and violà! A seriously delish meal.
