Miso, ginger and sesame buckwheat noodles with spiralised courgette, broccoli.
Combine butter, honey, miso paste, rice vinegar and black pepper in a baking tray. Throw in the chicken and put it in the oven at 180 degrees. Flip half way through cooking and cook until golden brown.
Mix grated ginger, sesame oil, miso paste, sugar or honey, soy sauce, rice vinegar and a bit of water together (recommend hot water to melt the sugar if using sugar) until desired consistency and flavour.
Cook buckwheat noodles and rinse in cold water. Mix in with vegetables and sauce, serve with chicken on the side.
