Japanese fried chicken thighs.

Cut chicken thighs into pieces, marinate with soy sauce, sesame oil, grated ginger, crushed garlic, season generously with salt and pepper. Leave for 1-2 hours.

Coat the chicken pieces in cornstarch or potato starch, deep fry in oil. Repeat if desired.

Serve with lemon wedges and sesame seeds.
