"Happy Yolks" inspired Kimchi Ramen

Mix together 4 cups of water, 1 onion, 1/2 a sliced apple, 3 slices of lemon, 1/4 of a cup of sliced shallots, 5 garlic cloves, 1" piece of ginger and 1/2 cup of kimchi - simmer for 30 minutes.

After 30 minutes, remove from the stove, drain, separate the broth and mix in 3tbsp of white miso paste.

Pour miso-broth over cooked rice noodles, sliced kale, cilantro and sliced green onions.
