Hoisin pork & eggplant: this was a work-with-what-ya-got meal. Did a quick marinade on the pork tenderloin of soy sauce, garlic, and red pepper flakes. Sautéed until just cooked through and removed from pan. Added hoisin and water to the jus and cooked down. Assembled white rice w/ a bit of sauce drizzled over the top, roasted eggplant, pork, more sauce drizzle. Sprinkled with cilantro and toasted sesame. Easy peasy!
