Hash: one sweet potato diced, handful of small purple potatoes diced, 1/2 large onion, kale, cilantro, chili powder, salt and pepper.
Dice, season, and sauté potatoes and onion. Add kale in the last 5-7 minutes of cooking. Top with fresh cilantro.
