Fideuà - like paella but with noodles

This Spanish dish is a little bit of work but totally worth the effort. I use a mix of meat and seafood just like I do with my paella.

1. Fry fideo's until brown, remove from oil and drain on paper towel (fideo's are short spaghetti like pasta. If you can't find you can substitute spaghetti cut in 1" pieces). This step could be skipped to simplify but it really does give the fideo's a nicer texture

2. Make your sofrito by caramelizing minced onion, garlic, red peppers, tomatoes, salt and Spanish paprika in olive oil - set aside

3. In the same pan drown your meat, I used chicken and chorizo here, but you could also use pork or squid

4. Add fried fideo's, sofrito, a splash of white wine or dry vermouth if you have it on hand, cover in good quality stock to just cover fideo's, season with salt, and add a good pinch of saffron

6. Bring to simmer and move to pre-heated oven for 10-15 minutes - 450F

7. Add shellfish to pan a few minutes before the pasta cooks and return to oven

8. Serve with alioli, lemon wedges, and parsley
