No-carb, sugar-free alternative to pizza:
Preheat oven to 400 degrees F
Dice 1.5 lbs thawed, boneless chicken breast into cubes.
Use blender/food processor to purée chicken. Combine puréed chicken with 1/2 cup Parmesan cheese, half cup mozzarella cheese, and 1 TB Italian seasoning + 1 TB minced garlic. Stir mixture together. Spread evenly onto a greased baking sheet. Use parchment paper or Saran Wrap over your hand to mold into a pizza crust.
Place crust into oven and bake for 15-20 minutes or until chicken appears white and cooked
Remove crust from oven. Spread classic toppings like pizza sauce, cheese, pepperoni, etc., or do a buffalo style pizza with spinach and olives as I did here.
Bake another 10-15 minutes. Enjoy!
