Gnocchi in a pork, ripe tomatoes, peas with bay leaves reduction.
Boil gnocchi separately, put in a serving bowl (500 gms).
Start the sauce with 1 cup water, olive oil, salt and pepper, oregano, thyme, rosemary, tomatoes and bring to a very low boil. Add butter and keep simmering for about 5 minutes then add about 125-150 grams of ground prime pork to the boil. Keep simmering for 15 minutes then crack an egg in the center and keep on low flame for about 8 more minutes then remove from heat.
Pour over gnocchi in the bowl holding the poached egg with a spoon so it remains on top.
Mix and serve.
