Ginger Sesame Chicken over Rice with Chili Mushrooms & Carrots
Brown onions, garlic, and ginger and white scallion parts in sesame oil. Add chicken, soy sauce, and chicken stock. Cook until chicken is cooked through.
Remove from pan. Add a bit more oil and add mushrooms and carrots and cook, adding more chicken stock as mushrooms dry out. Add a drizzle of chili oil. Remove from pan.
Serve...rice topped with chicken, then the carrot mushroom mixture, then top with an egg, bean sprouts, cilantro, and scallion greens.
