Lucky enough to live close to a fig tree? Don't ignore the fig leaves! They are delicious infused into cream or milk for panna cotta, ice cream or a simple yoghurt mousse. The flavour reminds me a little bit of coconut, matcha and fresh figs combined. You will need about 3 leaves for 500ml of liquid and you will want to infuse the leaves (shredded into bite-sized pieces) for about 30 minues in liquid that is hot to the touch.
