Miso Sugar - perfect for snickerdoodle cookies, crescent cookies, doughnuts, churros and anything else that benefits from a tumble in flavoured sugar. I picked up the idea from Bon Appetit a while ago but use white miso rather than the more pungent (and way saltier) red miso they suggest. Simply pulse some sugar with miso in a food processor until combined, spread out on a sheetpan to dry and store in an empty jam jar. Start with 1-2 teaspoons Miso to about 100g sugar, adding more if you want a stronger Miso flavour.
