My "leftover roasted chicken" salad. A mixture of diced up roasted chicken (white and dark meat), halved red grapes, one pink lady apple, 2 stalks celery, light and some dark green parts of a sliced spring onion, and toasted pepitas. Mixed in about 1/3 to 1/2 cup olive oil mayo and seasoned with kosher salt, cracked pepper, lemon zest and chopped fresh basil. Goes great with the GF (Food Should Taste Good) multigrain chips! I suppose would be delicious on a crusty baguette too.
