Make quinoa as normal. In a frying pan, add a little bit of olive oil (1 tsp?), a spoonful of minced garlic, and handful of chopped onions. Add sausage and cook until it turns slightly brown. Add mushrooms, chopped kale, and quinoa. Scoop out seeds from peppers and stuff with mixture. Add mozzarella cheese if you wish! Bake at 400 degrees for about 10 minutes. Super adaptable meal- could be dairy or gluten free!
