Here's how creative director Kristen Miglore made lunch in 10 minutes working from home yesterday: Heat cast iron skillet on high, shred whatever cheese is nearby (this time a mix of sharp and mild cheddar), pull scraps off of leftover roast chicken (especially thighs and undercarriage), adding each layer as it's ready. Char, squish, flip. Skip oil, realize it's not missed. Serve with Chili Lab chili butter. #notsaddesklunch
