100% spelt loaf with sunflower seeds for my lovely boy, such a quick and easy loaf to make...
400g spelt flour
1/2 tsp salt
1 tbsp olive oil
280 ml water
10-15g fresh yeast - just crumble it over the other ingredients
Mix it all together loosely, so that all the flour is covered by the liquid, and leave to prove for an hour..
Add 2 tbsp sunflower seeds and fold the dough; basically, lift a portion of dough, fold it over itself, then turn the bowl and do it again, and repeat 15-20 times until you have a lovely smooth dough and the seeds have spread through it..
Place the dough in a loaf tin (NOTE: spelt creates a very soft dough, it needs to be baked in a tin otherwise it will just spread) cover with a plastic bag and leave to rise for 1.5 - 2 hours..
Heat your oven to 220C (200C fan)
Bake for 30 minutes in the tin then remove from the oven..
Remove the loaf carefully from the tin and bake further on the oven rack for 3 minutes then remove and leave to cool on a cooling rack..
Give it a chance to cool sufficiently before slicing..
