Potato soup with sour cream and bacon
A last minute baked potato-inspired soup.
Sauté onions and garlic, add diced potatoes. Add stock (or water and stock cube) and simmer until soft. Use an immersion blender or regular blender and purée until smooth. Add milk or cream (if desired). Top with sour cream and homemade bacon bits (the best part). And chives, if you have 'em!
