Thinly sliced carrots, parsley and unsalted pistachios tossed with a lemon-y garlic-ky tahini dressing. Top with crispy, broiled lentils and a dollop of whole milk yogurt. Drizzle some olive oil and sprinkle red pepper flakes on top for aesthetic pleasure :-)
