I will never tire of roasting butternut squash and onions together. I love to cut my squash up into tiny cubes so that they get extra brown and crispy. It's about a pound of squash and 3 medium onions tossed with olive oil, salt, pepper, and a couple pinches of cinnamon. The oven gets preheated to 400 and I don't even know how long they roast for as I simply just keep checking to see if they're as brown as I like them to be. Love pairing this with a bowl of quinoa, black beans, and avocado with hot sauce. Amazing every time.
