My kiddos (ages 2 and 4.5) are typically picky, but they love their daddy's simple salmon patties. For each 6- to 7.5 oz tin of salmon (drained), we add one large egg, lightly beaten, and 1/4 cup Panko. Mix well, and fry in a little oil (we've been using avocado oil of late) until golden and crispy. This yields 6 kid-sized patties, but the recipe is easy to scale up for heartier appetites, and you could add any number of additional seasonings to the mix.

I should add that we usually use wild sockeye salmon with skin and bones, but you can certainly use your favorite skinless and boneless variety.
