Roasted cod, potato fondant cooked in butter (some chicken stock) and rosemary, and steamed asparagus with a beurre blanc - 3:1 wine to vinegar, 1 shallot. Bring to boil and reduce to almost nothing. Whisk in butter (~250g) off heat, slowly.. Season.
