Asparagus roasted with olive oil, red wine vinegar, salt, and red pepper flakes about 10 minutes, so it was tender but still retained some of its crunch. Rotini with a sauce of plain Greek yogurt stirred with a little of the cooking water, and fresh herbs - in this case, sorrel and thyme, but anything you like will work - and cheese. Parmesan would have been better, but alas, all I had on hand was cheddar :) A solid meal that came together in less than 20 minutes!
