Pan fried lamb over a tomato salsa with sweet potato and a red wine sauce.
Sweat down shallots and garlic in olive oil and deglaze with balsamic. Add in red wine and reduce to half. Add beef stock and reduce to half. Season. Make a salsa with tomatoes and basil, roast off wedges of sweet potato and serve!
