Sauté some diced zucchini, Italian sweet pepper, and an onion until soft and lightly browned. Add in a can of simple tomato sauce or crushed tomatoes and some herbs like basil, cilantro, and parsley. Simmer about 5minutes Soak 3 matzos for 30sec in water. Ladle sauce on bottom of a square pan followed by a matzo followed by sauce and ricotta Parmesan, and mozzarella cheeses. Repeat. Cover with foil for 15 min on 350. Remove cover and cook until brown for 25 min. If not browned enough put it in a broiler for a few but watch it. Enjoy!
