Spicy Carrot Ginger Peanut Butter Soup ??
Roughly chop and roast at 425 until they start to brown: 3 lbs carrots, 2 celery stalks, 2 yellow onions, 2 jalapeño pepper, 3-4 large cloves garlic
Heat a spoonful of coconut oil in a large pot, add roasted veggies, sauté until further softened
Add 1 tsp smoked salt, 1 inch knob ginger (grated), splash liquid aminos, 4-6 cups vegetable broth, bring to a boil, let simmer for ~10 min
Remove from heat, purée in batches, adding ~1/2 c milk, 2 big spoonfuls peanut butter, dash turmeric, and thinning with water as necessary
Serve with fresh ground pepper, chili flakes, and fresh mint
